Q： Have there been any studies conducted on green tea?
A： Research by the University of Kansas in the U.S. suggested that polyphenols in green tea leaf have antioxidant effectiveness at least 100 times greater than that of vitamin C and around 25 times greater than that of Vitamin E. Research by Newcastle University in the U.K. showed that green tea polyphenols help protect brain cells.
Q： Have there been any studies conducted on jasmine?
A： Beng Cao Gang Mu (Compendium of Materia Medica), an ancient Chinese medicinal book, reports the following about jasmine, "Flower. Scent: heady, warm, and non-toxic. Main uses: the extract obtained from steam distillation is used to make a face cream for scenting the skin and a smoothening hair spray. Jasmine is also used for tea." According to a written account from Beng Cao Zai Xin (Renewed Materia Medica), jasmine can "dissipate internal heat, eliminate chills, and bring down itchy growths." Also, according to a study published in the Journal of Biological Chemistry, the fragrance of jasmine is useful in soothing the senses, alleviating anxiety, and promoting sleep.
Q： What manufacturing process must jasmine tea undergo to retain its strong aroma?
A： Flower tea must be scented during its manufacturing process. This means putting jasmine flowers together with tea leaves to allow the tea leaves to be infused with the fragrance of jasmine. Jasmine flowers release their fragrance only when they bloom at night. Thus, jasmine flowers have to be in bloom in order for tea leaves to adequately absorb their fragrance. Because of this, the scenting process has to be done at night.
At dawn, fresh jasmine flower buds are harvested and temporarily refrigerated to prevent the flowers from blossoming. At dusk, just before the flowers bloom, jasmine flowers and tea leaves are evenly placed, with one layer of jasmine over one layer of green tea leaves. At night, when the flowers bloom naturally, their fragrance enters the tea leaves. The next morning, when the green tea leaves have sufficiently absorbed the jasmine fragrance, the first scenting is complete. The used jasmine flowers are discarded and fresh ones are harvested again to repeat the scenting process.
Q： Have there been any studies conducted on ashitaba?
A： Ashitaba's myriad health benefits are due to its chalcones found in the stems. A study published in Japan's Biological and Pharmaceutical Bulletin shows that ashitaba helps activate internal signals that increase the levels of brain-derived neurotrophic factor (BDNF), helping to maintain neurons. Another study shows that powders made from ashitaba help increase levels of nerve growth factor (NGF) in the brain and muscles. Chalcones in ashitaba not only promote the production of NGF and BDNF, but also serve as antioxidants.
